Cupcake Wedding Cakes

buns.ieSo you like the look of a cupcake wedding cake but your Aunt has already offered to make you a wedding cake as a gift! So what happens when you really, really, really want to have cupcakes because they’re just so so so cute!! Well I have options that you can do without hurting anyones feelings!!

So you have the usual fruit and chocolate biscuit wedding cake being made by your Aunt which you love and your parents and inlaws will love even more… big tradition in ireland is for parents of the bride and groom to take home the left over cake and give a piece to everyone they know! I’m sure its a good way to brag about the recent family wedding!!!! So why not add cupcakes to the wedding cake menu. Why not surround the wedding cake with cupcakes. This way you don’t have the messy job of cutting up a piece of cake for everyone on the wedding day, they can enjoy a cupcake instead and you can take home your cake for the day after to enjoy over stories of the day.

So you can either hire a local bakery to bake and decorate the cakes for you or why not try your hand at making them yourself! As it so happens I have a recipe and I tryed it out yesterday. Yum Yum, I didn’t decorate the cakes but they are yummy anyway. They are soft and sweet and very quick to put together and bake.

Ok so I only made a small batch to see what they were like. You will need 4oz of margerine or butter (at room temp.) 2 eggs (at room temp.) 4oz of self raising flour and 4oz of caster sugar.

Pre heat the oven to 180°c and put some paper cupcake holders into your cupcake tin.

Beat the sugar and butter until creamy and add in the eggs gradually. Once they are all beating up use a wooden spoon to stir in the flour and put a spoonful of the mixture into each cupcake holder and bake for 15 to 20 mins until golden brown and firm.

Cool on a wire tray and decorate with buttercream or icing….. yum yum

If you want to cook more just double the ingredients.
